The Mu in the Mumu
Okay, we know it’s not the pretties cooking method in the world, but the mumu is THE way to cook here in PNG.
Last weekend we had the MAF base end of year/ Christmas party, and we got to witness the seriousness of the art of a mumu. (And some highly entertaining games of volleyball).
Those in charge had the fires lit at 6am and rocks placed on the flames to heat up. Around 10am the meat of the day (pig and chicken) is layered on to the hot rocks wrapped in edible greens, then covered with more hot rocks. On top of those, corn on the cob, sweet potatoes, pumpkin, taro, and more greens are placed. Around 1pm, it was ready to eat.
Each family brings a bowl and all the food is divided up evenly. There was plenty!
It was eaten with fresh ginger on the side, and fresh pineapple for desert.
A great day of fun.
